Trail Mix Breakfast Cookies

Enjoy these tasty cookies when a snack craving hits. Full of walnuts, seeds, dried cranberries, and dark chocolate, they hit the spot when you need a burst of energy. Experiment with different dried fruits and whole grain flours. 

Trail Mix Breakfast Cookies 
~ recipe inspired by Bon Appetit
1 cup walnuts, broken into pieces
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1 large egg
4 Tbsp butter, melted
1/4 cup (50g) brown sugar
2 Tbsp (25g) granulated sugar
2 tsp vanilla extract
1 tsp salt
1/2 tsp baking soda
3/4 cup dried cranberries
3/4 cup chopped dark chocolate
1/2 cup (63g) Flourist Sifted Red Fife Flour

Preheat the oven to 350°F. Roast the nuts and seeds together on a baking sheet until golden brown, about 10 - 12 minutes. Transfer to a bowl to cool.

Combine egg, butter, sugars, and vanilla in a large bowl.  Combine flour, baking soda, and salt in a small bowl and whisk to combine. Let sit until the nuts and seeds have cooled slightly. 

Add nuts and seeds to the egg and butter mixture and mix to combine. Add the dried fruit and chopped chocolate. Once mixed, add the dries and mix until just combined. Cover with cling wrap and chill for 1-2 hours. 

Bring the oven back up to 350°F. Using a 1/3 cup cookie scoop, scoop cookies onto parchment-lined sheets, 6 to a tray. You should get 12 cookies. Press down to flatten slightly and sprinkle with sea salt if desired. Bake cookies, rotating the baking sheets after 10 minutes. Bake cookies for an additional 2-5 minutes, until cookies are nice and golden brown. Let cool before enjoying!

These cookies were tasty and not too sweet and loaded with good stuff but I found they were just a too salty with 1tsp salt. Having read the bon appetit recipe, they used kosher salt! I think this would make a big difference to the flavour. Maybe change the recipe to reflect this. I liked them but wouldn’t make again as they go very soft the next day and don’t keep so well. Need to eat day of :)


Made these tasty treats today with spelt flour and chopped dried apricots in place of some of the cranberries. Great mid-morning snack!! The kids loved them too!


I just made these and they were super easy and tasty. Had to make a bunch of substitutions but the recipe has a lot of leeway for that. I was out of butter so used avocado oil, semi sweet chocolate chips instead of dark chocolate, golden raisins instead of cranberries, and almonds instead of walnuts. So yeah, full scale swap out due to limited ingredients, but doesn’t change the fact that recipe was super easy and ended up delicious!
