French Lentil Walnut Salad

There are so many ways to enjoy our French Lentils in salads, but this combo is a favourite with walnuts and currants or dried cranberries. This recipe is incredibly simple, yet extremely satisfying! 

French Lentil Walnut Salad
1 cup dry Flourist French Lentils, soaked and steamed
1/4 cup olive oil
1 tsp salt 
1/4 cup red wine vinegar
1 cup walnuts, toasted and finely chopped 
1/4 cup chopped Italian parsley 
1/4 cup currants or dried cranberries

Soak and steam the French Lentils as follows. When steaming French Lentils it is important to soak them for 4-20 hours. Once soaked, drain and rinse them thoroughly. Then steam in a vegetable steamer basket for 10-15 minutes, until tender but firm. Once finished cooking, remove them from the steamer and allow them to cool slightly. 

While the lentils are hot, add the olive oil, salt and red wine vinegar and stir well. Allow the lentils to cool before adding the chopped walnuts, currants or dried cranberries, and fresh parsley.
