Everything Bagel Spice Biscuits

Give This Everything Bagel Spice mix hits all of the right umami notes and we've been sprinkling it on everything from avocado toast to Whole Grain Cheesy Crackers. It's the perfect addition to these buttery biscuits {along with extra butter once they're baked}.

Everything Bagel Spice Biscuits

Spice Mix
2 tbsp each black and white sesame, toasted and cooled
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp poppy seeds
1 tsp salt

Biscuits
2 1/2 tsp baking powder
2 tsp salt
2 tsp sugar
1/4 tsp baking soda
3 1/2 (483g) cups Flourist Sifted Red Spring Wheat Flour
1 cup (227g) butter, chilled and cubed
1 1/2-2 cups buttermilk, chilled
1 egg white

Preheat oven to 400°F and line a baking sheet with parchment paper. To make the spice mix, combine all the spices and salt together in a small bowl. 

In a large metal mixing bowl or food processor, mix together the baking powder, salt, sugar, baking soda, 5 tbsp Spice Mix and Flourist Sifted Red Spring Wheat Flour. Add chilled butter and cut with a pastry butter or pulse until butter is about the size of a pecan half.

Transfer to a large bowl and add 1 1/2 cups buttermilk and toss together with a fork. Knead a few times until the dough is shaggy, you may need to add a more buttermilk but mixture should be a little dry.

Turn out onto a clean surface and pat into a 1-inch thick square. With a knife or bench, scraper cut into four squares and stack them on top of each other. Flatten slightly and roll into a 1-inch thick rectangle. Trim edges and cut dough into 12 biscuits. Roll together the scraps and form one more biscuit.

Place biscuits on a prepared baking sheet and refrigerate for at least 30 minutes. When ready to bake, brush the tops with egg wash and liberally sprinkle with the remaining Spice Mix. Bake for 20-25 minutes until deep golden brown. Let cool slightly and transfer to a cooling rack.
