Flourist Millet: A Cooking Guide

Millet is an ancient grain which is rising in popularity. Use it as a base for your favourite vegetable stir fry or enjoy with a curry or stew.

Boiling Method
In a large, dry saucepan, toast 1 cup raw Flourist Millet over medium heat for 4-5 minutes or until it turns a rich golden brown and the grains become fragrant. Be careful not to let them burn. 

Add 2 cups water and 1/4 tsp salt to the pan. Since the pan is hot, the water will sputter a bit when you pour it in. After adding water and salt, give the millet a good stir. Increase the heat to high and bring the mixture to a boil. Decrease the heat to low, and cover the pot (optional: add a tbsp of butter to the millet before covering).

Simmer until the grains absorb most of the water (they'll continue soaking it up as they sit), about 15 minutes. Avoid the temptation to peek a great deal or stir too much (unless it is sticking to the bottom). Stirring too vigorously will break up the grains and change the texture.

Remove from heat and let stand. Like many grains, Millet needs a little time off the heat to fully absorb the liquid. Allow it to sit, covered and removed from heat, for 10 minutes. After Millet sits, fluff it with a fork. Taste and add additional salt if you'd like. 

Instant Pot Method
Cook your Millet with a ratio of 2 parts water to 1 part Millet. Set your Instant Pot to sauté and toast the Millet for a few minutes until fragrant. Add the water and cook on high pressure for 9 minutes. Let sit for 10 minutes before manually releasing. 

Nutritional Notes
Millet is an excellent source of copper, manganese, phosphorus, and magnesium. It is thought to be one of the best grains for heart health because of the high amounts of magnesium it contains.

Millet, like other whole grains, helps to maintain healthy blood sugar levels, which makes it an excellent addition to the diets of those with diabetes. Because Millet is so high in fiber, it lowers cholesterol and is great for your digestion. It is also rich in antioxidants which can help detoxify the body.
