7 Delicious Recipes for Laird Lentils
If you’ve got a box of our Flourist Laird Lentils in your pantry, you’ve got the start of many delicious and highly nutritious meals.
Our Canadian-grown Laird Lentils are large, hearty green lentils with a wonderfully satisfying texture. Great for soups and salads, or simply dressed with olive oil and salt and kept in the fridge for easy meals throughout the week.

1. Gentle Lentil Soup
This super simple Gentle Lentil Soup requires very little prep and, best of all, the lentils don’t need to be soaked first. Onions, tomatoes, rosemary and a splash of red wine vinegar turn your lentils into a simple, nourishing pot of soup. Enjoy it alone or with a fresh slice of sourdough.
2. Skillet Shepherd’s Pie
For something a little heartier, this classic Shepherd’s Pie is hard to beat. It's a popular favourite in our kitchens! Laird Lentils are cooked with vegetables, beer or wine and tomato, then topped with creamy mashed potatoes and cheddar and baked until golden. It keeps well and gets better as it sits.
3. Marinated Laird Lentils
One of the simplest ways to appreciate Laird Lentils is to let the lentils be the star on their own. Cooked lentils are tossed while warm with olive oil, red wine vinegar, Dijon mustard and chilli flakes. Keep a batch in the fridge and add them to salads and grain bowls, or add them to toast, with labneh or cream cheese underneath.
4. Harvest Laird Lentil Salad
Laird Lentils make an especially satisfying base for a meal-sized salad. This version combines them with corn, roasted carrots, feta, pumpkin seeds and plenty of fresh herbs. It’s colourful, substantial and a great recipe for using whatever seasonal vegetables you have on hand.
5. Easy Baked Laird Lentils
Love our Classic Baked Beans? This recipe is a twist on the classic, but it's made instead with Laird Lentils. It's not so surprisingly delicious! The lentils are simmered with onions, tomato paste, honey and molasses until rich and saucy. Serve these lentils with toast, olive oil, fresh herbs or even pesto for an extremely satisfying meal.
6. Herbed Mustard Lentils
This is an excellent recipe to make once and eat throughout the week. Cooked Laird Lentils are tossed with Dijon and grainy mustard, lemon, white wine vinegar, olive oil, tomatoes, onion and fresh herbs. Eat them on their own, spoon them onto toast or add some crumbled feta on top.
7. Laird Lentil Hummus
Yes, you can turn Laird Lentils into hummus! This creamy version combines cooked lentils with tahini, Greek yoghurt, lemon, toasted cumin, garlic and olive oil. Serve with vegetables and bread, or make it part of a larger lunch or dinner spread.
