Farro, Pea and Fava Bean Salad

This is a rich and tasty summer salad featuring Fava Beans, fresh shelling peas, and Farro. Use whatever cheese you have on hand for crumbling, we like blue cheese or feta here. 

Farro, Pea and Fava Bean Salad 
1 cup dry Flourist Farro, cooked according to package directions 
2 pounds fresh Fava Beans, shelled 
1 cup fresh peas, shelled
4 scallions, sliced on the diagonal 
1/3 cup Epic Dressing, or to taste  
1/3 cup crumbled blue cheese or feta 

Epic Dressing
1 minced shallot
1/4 cup olive oil
1/4 cup white wine vinegar
1 tbsp Dijon mustard
1/2 tsp salt
1 tbsp sugar

Cook the Farro according to package directions and drain. Once drained, add to a large salad bowl to cool. Steam the shelled Fava Beans and peas together for 5 minutes in a vegetable steamer, or until tender but not mushy. Remove and allow to cool in a bowl or, to speed up cooling, lay on a large baking tray. Prepare the dressing by whisking all the ingredients in a small bowl. 

When the Farro and beans / peas have cooled, toss all ingredients except the cheese together, reserving a few green onions to garnish, with the dressing. Serve topped with crumbled cheese and and reserved green onions. Serves 4-6 as a side.
