Whole Grain Fruit Bars

After having so much success with our recently shared Red Fife Fig Bars, we decided to use the same dough to make a simple fruit bar. These are a great snack on the go, especially for little ones.

Whole Grain Fruit Bars
1/2 cup jam of your choice
1/2 cup nuts, toasted chopped (optional)
1 recipe for Red Fife Fig Bar dough

Preheat oven to 350°F and line a baking sheet with parchment paper. 

Roll dough between two large pieces of parchment paper into a rectangle, with the long side closest to you. If the dough becomes too soft to work with, place in fridge or freezer for a few minutes. The dough will puff slightly when baking so you want to roll as thinly as possible without it breaking. Trim the edges so they are straight. 

Spread the jam evenly on one half of the dough (you will fold the dough in half like a book), leaving about 1/2 inch from the edges. Sprinkle chopped nuts over the jam if desired. Carefully take the dough from the side that doesn't have jam, and fold it over the filling, like a book. Press very gently to avoid filling from squeezing out, and apply more pressure alongside the edges to seal. Repeat with any remaining dough. 

Gently loosen the bars from the parchment with an offset spatula, slide it underneath to lift and transfer onto a prepared baking sheet.

Bake the bars for about 15 minutes, until they are puffed and firm, and not too golden brown. Immediately cut into squares with a sharp serrated knife. Let cool completely.
