Try this new recipe featuring our Classic Baked Beans and humble roasted potatoes! Our Classic Baked Beans are easily one of our most iconic recipes, and they have been on the menu since Flourist opened in 2019. This combination ticks all the boxes!
One Pan Cheesy Beans + Potatoes
2 cups Classic Baked Beans (about 2 cups)
3 medium yellow potatoes
1-2 tsp olive oil
1 tsp salt
2 tsp herbs de Provence
100g grated cheddar cheese
50g crumbled feta cheese
Fresh baby arugula
Dried chili flakes (optional)
Heat the oven to 400 degrees and line a cast iron pan or low dutch oven with parchment paper. Cut potatoes into wedges and in a bowl, coat the potato wedges in olive oil, salt, and herbs de Provence. Add to the parchment lined pan and bake for 50 minutes, checking at 30 minutes to turn the wedges to promote even cooking.
When the potatoes are ready, remove the pan from the oven and remove the parchment, spread the potatoes in the pan evenly. Add a little more oil to the pan. Add the baked beans by spreading them evenly over the potatoes. Top the mixture with grated cheddar cheese and crumbled feta. Bake at 400 degrees, uncovered, for 20 minutes.
Remove from the oven and let cool for a few minutes. Just before serving, top with a few handfuls of fresh arugula. Serve with Herby Yoghurt Dressing.
Herby Yoghurt Dressing
1 cup plain yoghurt
1 bunch Italian Parsley
1 tsp salt
Juice of one Lemon
Blend all until creamy and enjoy! Taste to adjust seasonings as desired and play with other fresh herbs like dill or basil.
This recipes serves 3-4 as a side, or 2 for a satisfying, complete meal.
