Golden Quinoa Breakfast Bowl
1 full can coconut milk
3/4 cup Flourist Golden Quinoa
Pinch of salt
1⁄2 cup rolled oats
1/2 cup water
Toppings: coconut butter or butter, chopped toasted almonds, coconut, apple, maple syrup, milk of choice.
Combine the coconut milk, quinoa, and salt in a small saucepan. Heat to a boil then reduce the heat to low, and simmer with the lid on for 15 minutes, until the quinoa is softened. Add the oats and the water and stir well. Cook for a further 5 minutes until the porridge is uniform and the oats have expanded.
Serve piping hot topped with maple syrup, coconut butter, chopped almonds, milk of choice, and finely chopped or grated apples. Serves 3-4.
