20 Minute French Lentil Hash
1-pint Roasted Grape Tomatoes, (recipe to follow)
2 tbsp olive oil
1 cup red onion, coarsely chopped
2 cups cooked Flourist French Lentils
Handful chopped fresh basil & parsley
Chili flakes to taste
Black pepper to taste
To make the hash, be sure to have the roasted tomatoes handy by either pre-roasting them or starting them first. Heat the oil over a wok or heavy-bottomed skillet and add the red onion. Cook for 4-5 minutes then add the cooked Flourist French Lentils. Heat through for five more minutes, adding salt & pepper to taste. Before serving, fold in the Roasted Grape Tomatoes and heat through. Serve topped with chopped fresh herbs, chili flakes and more salt & pepper to taste. Serve warm.
Roasted Grape Tomatoes
1-pint grape tomatoes, rinsed
1-2 tbsp olive oil
This recipe will make you wonder how you ever lived without it, as the quick roasting of the tomatoes creates a flavourful bite that mimics sun-ripe summer tomatoes.
To make, preheat the oven to 400 degrees. Toss the tomatoes with the olive oil and lay on a flat baking tray. Add to the oven and cook for 10 minutes, just until the skins start peeling. Remove the tomatoes and allow to cool, or enjoy right away. We love to let these cool before using to develop the texture and flavour.
