Durum '00' Flour Chapati

Make these super simple flatbreads to serve with your favourite curry or soup. We've been testing recipes to use with our Flourist Durum '00' Flour; we love this recipe for its simplicity. The flavour of the Durum wheat really shines through here. 

Durum '00' Flour Chapati    
Yields 8-10 pieces
2 cups (250g) Flourist Durum '00' Flour
1 Tbsp (15g) olive oil 
2 tsp (10g) Salt
Water as needed (about 1/4 - 1/2 cup)

Combine all ingredients in a bowl except the water and stir together. Add the water slowly until it begins a cohesive mass. Knead until smooth. Return to the bowl and cover with a kitchen towel and let sit for about an hour. Divide into 8-10 equal and roll into a ball. Lightly dust the counter with flour and roll out into a thin round. It is best to cook and roll out rounds simultaneously. Rolling out all of them before cooking could cause them to dry out. Alternatively, you could cover them with a damp towel.

Heat a cast iron skillet on medium high until nice and hot. Add one chapati round and cook for a minute before flipping over. The chapati will have some air pockets which is normal. Transfer to a plate and add the next round and cook in the same method.
