This recipe gets its flavour from roasted cherry tomatoes, which are seasoned with herbs. Wheat Berries are high in fibre and plant-based protein and make the perfect base for flavourful veggies and a bright dressing. Add cheese if you like. You could even add a cup of cooked chickpeas!
Wheat Berry + Roasted Tomato Salad
3 cups cooked Flourist Wheat Berries (about 1 cup dry)
2 pints cherry tomatoes
2 tsp olive oil for roasting tomatoes
2 tsp Herbs de Provence
1/2 red onion, chopped
1 small cucumber, or 1/2 large English Cucumber
1/2 cup Italian parsley, chopped
1/3 cup toasted walnuts
Optional cubed or crumbled feta or goat cheese
Dressing
1/4 cup Olive oil
1/4 cup Red Wine Vinegar
2 tsp salt
Green onions to garnish
In a large pot, combine one cup of dry Flourist Wheat Berries with 6-8 cups of cold water and one tablespoon of apple cider vinegar. Cover, bring to a rolling boil, then reduce to a steady simmer with the lid on. Cook for about one hour, until the grains are plump and tender, then turn off the heat and let them soak in the hot water for 15 minutes.
Meanwhile, preheat the oven to 400 degrees and prepare a tray with parchment paper or lightly oil a cast-iron pan. Rinse the cherry tomatoes, scatter them on the tray, drizzle with olive oil, and sprinkle with Herbs de Provence. Roast for 25-30 minutes, shaking occasionally, until soft and slightly caramelized.
Toast the walnuts in the oven on a separate tray. Scatter the nuts in an even layer and dry roast for 7-10 minutes. Careful not to let them get too dark! Remove when fragrant and allow to cool.
While everything cooks, chop the fresh cucumber, red onion, and parsley. Prepare the dressing by combining the oil, vinegar and salt in a jar. Shake well.
Drain and rinse the wheat berries, then place them in a large bowl. Add the roasted tomatoes, fresh vegetables, and walnuts. Drizzle with all of the dressing, toss gently, and garnish with sliced green onions.
Serve at room temperature, with optional crumbled goat cheese or feta. This recipe serves about 6-8 as a side.
