There's nothing better than having a batch of chickpeas on hand to whip up your favourite recipes! We love this new twist on a chickpea salad, play with the amounts of tahini in this recipe depending on your preference. We recommend using fresh orange juice for the brightest flavour.
Sesame Citrus Chickpeas
1 cup dry Flourist Kabuli Chickpeas, or 2.5 cups cooked
6 tbsp toasted sesame oil
1/3 cup fresh orange juice
2 1/2 tsp soy sauce
1 tbsp tahini (more to taste)
1/2 tsp salt, or to taste
2 tsp fresh lemon juice
1/2 cup chopped red onion
1/4 cup fresh parsley
First, soak the chickpeas and cook according to the cooking directions here. Using a hand blender or a regular blender, combine the sesame oil, orange juice, soy sauce, tahini, salt and lemon juice in a blender and blend until emulsified.
Toss the cooked chickpeas in the dressing and add the red onion and parsley. Adjust the dressing to taste with more lemon juice or salt as desired.
Serves 3-4 as a side. This recipe will keep well for up to a week in the fridge.
