Red Pepper Hummus with Fried Capers + Sun-Dried Tomatoes

Every once in a while it's nice to amp up a favourite recipe like this version of our Classic From-Scratch Hummus. We like to dress up our hummus from time to time, like we did a few months back with this Classic Hummus With Pine Nuts, Grilled Artichokes + Olive Oil. This version includes a favourite of ours, fried salty capers, along with sun-dried tomatoes and delicious roasted peppers.  

Red Pepper Hummus with Fried Capers + Sun-Dried Tomatoes
1 recipe Classic From-Scratch Hummus 
1 cup roasted red peppers (about 2 red peppers)
2 tbsp butter or olive oil 
1/3 cup capers
1/3 cup sun-dried tomatoes in oil, chopped or sliced 
Olive oil for garnish  
3-4 tbsp chopped fresh Italian parsley 

Make your hummus using cooked Flourist Kabuli Chickpeas, adding the red peppers to the blender with the rest of the ingredients from our Classic From-Scratch Hummus. Transfer to a clean serving bowl. Heat the olive oil in a frying pan and fry the capers for 3-4 minutes, stirring frequently. Remove from the pan when they are crispy. 

Top the hummus generously with the fried capers, chopped sun-dried tomatoes, olive oil, and parsley. Serve with crackers or crusty sourdough.
