We love the flavours of our favourite Mediterranean foods together, especially when paired with our Canadian grown Flourist French Lentils. Finely shredded Brussels sprouts provide a little green and whole lot of crunch.
French Lentil & Brussels Sprout Salad
2 cups cooked Flourist French Lentils
10 Brussels sprouts, finely shredded
1/2 cup sun-dried tomatoes in oil, sliced
1/2 cup kalamata olives, ideally pitted
2-3 tbsp olive oil
3 tbsp balsamic Vinegar
salt to taste
1/4 cup chopped Italian parsley (optional)
1/2 cup crumbled feta cheese (optional)
First, cook the Flourist French Lentils according to package directions, or use our soak & steam method. Prepare the chopped items and as they are ready, add to a large mixing bowl. Combine all of the ingredients together and mix well. Serve as is with added shaved Parmesan or crumbled feta.

Loved this recipe; fresh, quick, easy and the measurements were perfect. I used only 1 cup of lentils, and used your steaming method! Perfect and easy as the lentils were cooked to perfection. Merci!
