These easy to make, wholesome pancakes are made using only four core (and high protein!) ingredients. Featuring our new Organic Rolled Oats, this is a filling and highly nutritious breakfast or snack you'll make on repeat!
Simple Oat Pancakes
1 cup Flourist Organic Rolled Oats
1 cup cottage cheese
1/4 cup thick greek yoghurt or Skyr
2 eggs
1-2 tsp cinnamon
2 tsp baking powder
2 tsp vanilla
pinch of salt
1 tsp coconut or canola oil for cooking
Combine all of the ingredients in a blender, and blend until smooth. Use a spatula to scrape down the sides of the blender and try not to over blend. The batter will be quite thick. Once blended, transfer to a bowl and let sit for 5 minutes.
Heat a non-stick pan or pancake griddle to medium-high. Melt some coconut butter or pour some canola oil to the heated pan, just enough to cover. Scoop the batter into the pan using a 1/4 cup measuring cup. Cook for 2-3 minutes until a few bubbles start to appear in the batter. Flip the pancakes and cook for another 1-2 minutes until cooked through.
Enjoy with maple syrup, butter or coconut oil and fresh fruit.
