Kale Power Salad with Golden Quinoa + Black Beans

Make this salad for a group dinner or as a power lunch for the week ahead. It's a full plant-based meal with Flourist Golden Quinoa, Flourist Black Beans, and pumpkin seeds adding a boost of protein and healthy, complex carbohydrates. Save any extra dressing to enjoy on green salads. 

Kale Power Salad with Golden Quinoa + Black Beans
1 cup dry Flourist Golden Quinoa, cooked according to package directions
1 cup dry Flourist Black Beans, soaked & cooked until tender
1/cup red onion, finely chopped
1 cup toasted pumpkin seeds
1 heaping cup cherry tomatoes, halved
1 cup cilantro leaves
8 cups chopped curly kale, about 2 bunches
2 avocados

Salsa Lime Dressing 
3/4 cup olive oil 
3 tbsp fresh lime juice
2 tbsp fresh lemon juice
1/4 cup tomato salsa
2 tbsp pickled jalapeños
1 tbsp pickled jalapeño juice
1 tbsp sugar
1 tbsp dried cumin 

Blend all dressing ingredients in a high powered blender and set aside. Combine all the salad ingredients except for the kale in a bowl, reserving some pumpkin seeds, tomatoes, and cilantro for garnish. Add dressing, starting with 3/4 of the recipe and mix well. The mixture will be wet.  Add the kale, a large handful at a time, tossing gently with your hands to ensure it is evenly mixed. Add remaining dressing if desired and mix well. Top with cubed ripe avocado and reserved garnishes.
