Our friend Connally was easily one of our first converts, when she worked at one of our favourite retailers, Cook Culture. She was kind enough to pass on this easy lentil dahl recipe, which is perfect and easy in every way. Dress it up or enjoy it plain jane.
Connally's Coconut Dahl
1 tbsp butter or coconut oil
1 sweet onion, diced
2 cloves of garlic, chopped finely
1/2 tbsp ground cumin
1 tsp ground coriander
1/2 cup Flourist Laird Lentils
1/2 cup Flourist French Lentils
1 can coconut milk
1/4 cup water
1 tsp salt
1 bunch chopped, fresh cilantro
Melt the butter or oil in a sauce pan over medium heat. Add the onion and garlic and sauté until soft. Add in the spices and stir to coat. Add the remaining ingredients, except the cilantro and stir to combine. Turn the heat to low and cook, covered, until the Lentils are soft. Season to taste with salt and pepper. Remove from the heat and fold in the chopped cilantro.
