Chickpea, Chive + Cheddar Salad

Enjoy this lovely protein rich salad featuring our premium Kabuli Chickpeas, aged cheddar and spring chives. Make double of the dressing recipe and use for everything from green salads to pasta salad. 

Chickpea, Chive + Cheddar Salad
3 cups cooked Flourist Kabuli Chickpeas (about 1 cup dry or 200g)
1/2 cup finely chopped red onion 
1 large bunch fresh chives, chopped 
2 cups chopped English cucumbers 
1-1.5 cups cubed aged white cheddar

Balsamic Yoghurt Dressing
1/2 cup olive oil
6 Tbsp Balsamic vinegar
2 Tbsp maple syrup 
1/2 tsp salt
1 tbsp Dijon mustard
1/4 cup greek yoghurt 

Combine the cooked chickpeas, red onion, chives, cucumbers and cubed cheddar in a bowl. Make the dressing using an immersion blender or by adding all the ingredients to your blender and blending until emulsified and creamy. 

Add dressing to salad ingredients to your preference and stir. Taste to adjust salt and add freshly ground black pepper if desired. Serve over fresh salad greens. This salad serves 4-6 as a side and keeps well for up to 3 days.
