Use this fine, sifted flour to create delicious homemade fresh pastas. With a high natural protein content and intense flavour, this wonderful specialty flour adds character and strength to breads and pizza doughs. We recommend to use it as a supplement to breads and pizza doughs rather than using it in high percentages. The high oil content of this flour makes it more suitable as a flavour enhancer in most recipes, except for fresh pasta where it shines.
All of our freshly milled flours are stoned milled to order from organic and GMO free grains, grown in Canada by farmers we know. We recommend storing our fresh flours in the fridge or freezer to maintain freshness.
