The best pasta flour available
Cannot recommend highly enough. Makes perfect pasta either egg or water-based, but beware this flour acts differently than shelf-stable grocery store 00 flour and if you're following a recipe you should hold back on the flour amount stated. I find it helpful to measure the cracked egg(s) first, and multiply by 1.6 to get the appropriate flour weight, adding more as necessary when kneading to get a non-sticky, elastic dough depending on the humidity.

Everything looks great and came quickly. I am busy using up old flour before I start with the new stuff. However I did have to open a bag of Sifted Red Fife to finish making a second batch of sourdough. It was a beautiful colour and very rich feeling in texture. The next sourdough bread will be made with this flour. All five stars are for the amazing service and a product that looks and feels freshly amazing. I will let you know how my next sourdough bread with the new flour turns out.
Have used the sifted whole wheat and the rye flours. They are great and have made excellent bread. Plan to use the Durum for fresh pasta soon.
