High in protein, Red Spring wheat is the go-to grain for bread baking flour, but also cooks nicely for salads and soups. Red Spring wheat accounts for the majority of wheat grown in Canada — and has garnered a reputation internationally for its superior milling and baking qualities. Mill it, sprout it, soak it, or boil it whole.
To cook, combine 1 part Wheat Berries with 4 parts water. Bring to a boil and simmer for 45-60 minutes or, until tender but firm.

My go-to grain bowl base
I'm not a meal-prepper, but I keep a container of these cooked and ready in the fridge to add to so many meals throughout the week. A great salad or soup addition, and way more filling and satisfying than brown rice as the base for a grain bowl.
They are delicious, snap, pop, crunch in your mouth, used in a salad first time, originally bought to put in my whole wheat bread recipe, that will be next.
As with all of Flourist grains, the wheat berries are easy to cook and have a really nice texture and distinct flavour.
