Make this easy salad when kale is at every farmer's market stall alongside those pints of sweet cherry tomatoes. Whip up the dressing and use it on everything, starting with this super simple three-ingredient meal.
Easy French Lentil + Kale Salad
3 cups cooked Flourist French Lentils
1/2 bunch green kale, chopped
1 pint mixed cherry tomatoes
1/4 cup thin red onion slices, optional
Poppy Seed Dressing, to taste
Poppy Seed Dressing
1/2 cup water
1/3 cup apple cider vinegar
1 shallot, minced
3 tbsp honey
2 tbsp Dijon mustard
2 tsp salt
1 tbsp poppy seeds
1 1/2 cups vegetable oil {olive or canola}
*This recipe will make a fair amount; use the extra for green salads
Dressing
First, prepare the dressing by combining all of the ingredients except for the poppy seeds and oil in a blender. Blend on high and add the poppy seeds. Then, gradually add the oil in a steady stream until it is all added. Stop blending once all the oil is added. Transfer the dressing to clean jar.
The Salad
First, steam the kale over hot water until bright green and wilted, about 3 minutes. Once the kale has cooled, combine all of the ingredients together and add dressing to taste. Serves roughly 2 as a meal, 4 as a side.
Experiment with raw kale instead of cooked, we like it both ways.
