30 Minute Orzo with Burrata

This is a fancy-feeling meal that comes together in 30 minutes and with just a few key ingredients. Use your favourite jarred tomato sauce to keep it simple, or if time allows, a homemade sauce. Either way the results are delicious and impressive! 

30 Minute Orzo with Burrata
2 cups dry Orzo Pasta
2 tbsp olive oil
1 red onion, chopped
1 clove fresh garlic, minced (optional)
2 fresh tomatoes (Heirlooms or Romas), chopped 
1 cup prepared Tomato Sauce
handful fresh basil
1/2 tsp salt or taste
1 250g ball Burrata
Olive oil to finish
Pinch of chili flakes
Freshly ground black pepper

Heat a large pot filled with cold water until boiling. Once boiling, add salt and orzo and cook for 11 minutes. While the orzo cooks, heat the olive oil in a large pan or Dutch Oven. Add the chopped red onion and optional minced garlic clove. Cook for 6-8 minutes then add the chopped tomatoes and the salt. Cover and simmer for 5 more minutes, stirring here and there. Add 1 cup of your favourite tomato sauce and heat through for a few more minutes.

Drain the orzo once it's ready. Stir directly into the pot with the sauce. Add chopped fresh basil and adjust seasonings to taste. Serve hot, on a large platter with the ball of fresh Burrata in the center. Drizzle with olive oil, more salt and black pepper before serving at once. 

Alternatively, divide the pasta into bowls and top with individual portions of Burrata, as you wish. This recipe serves 2-3, depending on appetite and whether it is served with bread and a green salad.
