Marinated Pinto Beans

Make these delicious Marinated Pinto Beans when assembling our popular Mediterranean Bowl at home. Create your own custom bowls once you have a few ingredients on hand. The key components are toast, a hard-boiled egg, hummus, olives, and your favourite chutney or savoury jam. 

Marinated Pinto Beans
400g (2 cups) dry Flourist Pinto Beans, cooked according to our Cooking Guide
1/3 cup olive oil 
1/3 cup red wine vinegar 
1/4 tsp Aleppo pepper 
1/2 tsp salt (more to taste) 
1/2 cup finely minced parsley  

Cook the Pinto Beans according to the Cooking Guide until tender, but not too soft. Drain and rinse lightly. While still hot, toss the hot beans in a large mixing bowl with the olive oil, red wine vinegar, Aleppo pepper, salt, and parsley. Adjust salt to taste and serve. 

To build a Mediterranean Bowl, combine dressed greens tossed in your favourite vinaigrette in a large bowl with sourdough toast, hummus, a boiled egg, cubed feta cheese, olive, and a generous garnish of fresh parsley and freshly ground black pepper.
