Make this recipe when you crave simple sustenance with a hint of sophistication. We love the addition of garden chives and two different ways to incorporate tomatoes. Experiment with different kinds of wine vinegar for variation.
French Lentil & Tomato Salad
4 cups cooked Flourist French Lentils
1/2 red onion, finely chopped
1 pint cherry tomatoes, halved
1 cup sun-dried tomatoes in oil, chopped
1/4 cup minced fresh chives
1 cup Dijon Vinaigrette, or as desired
Dijon Vinaigrette
1 cup olive oil
1/4 cup white wine vinegar
1/4 cup balsamic vinegar
1 tbsp dijon mustard
1/2 tsp salt or to taste
1 tsp sugar, or to taste
black pepper to taste
Combine all salad ingredients together in a bowl, and add dressing to taste. If time allows, soak the red onion 30 minutes beforehand in cold salted water to cover. This will remove some of the bite, if it is a strong onion.
