This is a fantastic spring salad that is simple to make but very tasty and impressive to look at! We love to steam our lentils for salads, as it ensures the lentils stay tender but do not overcook.
French Lentil, Pea + Radish Salad
1.5 cups cooked French Lentils
3/4 cup watermelon radish, peeled and cut into matchsticks
1/2 cup snap peas, sliced diagonally
1/4 cup diced red onion
1/3 cup feta, cubed
1 tbsp Capers
Fresh chives
Fresh Parsley
1/3 cups cooked toasted almond slivers or slices
Epic Salad Dressing
1/2 cup olive oil
1/2 cup white wine vinegar
2 tbsp Dijon mustard
1 tsp salt
2 tbsp sugar
Toss everything together with Epic Dressing to your preference and enjoy!
Blend all ingredients until emulsified. Store in the fridge. This recipe serves 2.
How To Steam Lentils
To steam lentils, start with soaking 2 cups of dry French Lentils overnight to get the ball rolling. Drain and rinse the lentils, then steam using a vegetable steamer in a pot of water for 20-25 minutes.
After 20-25 minutes, the lentils will be cooked. Transfer them into a bowl and add 1/4 cup each of olive oil and red wine vinegar while they are still hot. Add 1 tsp salt too, mix and cover the bowl. These can be stored in the fridge as is until you are ready to use them.
